Seriously. I can't remember and I have no idea how all the ghouls got to Tokyo. Maybe this goes a little beyond the show but even if you google what a ghoul is, it doesn't say how it happens. Vampires bite you and it can turn you or kill you. Is that how it works with ghouls too?
In folklore that pertains to the real world there really doesn't seem to be much history behind ghouls. Unlike their "cousin" monsters, vampires, zombies, and the like, they just don't have a rich lore. I guess ghouls are just born that way.
In TG ghouls are also just born that way (not counting artificial ones). It hasn't been explained where they come from, but I kind of just assume that they're the natural predators of humans. There could be more behind it, like the idea that they were created has been those around by the fandom, but nothing is really known.

iirc he was hit in the stomach by Rize's kagune in the construction site (in the first chapter/episode). so I'm guessing Rize's stomach was operated into him, making him hunger for human meat rather than human food. I don't know how he got the kakugan though, I don't remember if he hurt his eye or if whole eye transplant is possible.
As to where the ghouls came from as a whole (how did they get to Tokyo or other parts of the world), isn't it a bit implied that they existed alongside humans for a long time? CCG and other organizations battling them exist for a long time.
I think the source of ghouls, if they evolved from humans or what, is one of Touka's main research in Kamii.
Ghoul mythology comes from Arabs actually who describe ghouls sort of an "evil genie", they were said to be grave robbers who consumes human flesh.
Now if we go by original stories, you don't become one but you are being born as one. They believed ghouls to be hybrids of devil mixing themselves with humans and as such giving offspring of ghoul. Now other three interesting things about ghouls from myths is that they are stated to look exactly as humans but if they don't feed regularly they will take more monstrous and deformed look as well lose grasp of their sanity and humanity, also they can take form of person they have devoured as well and also they are said to be able to shapeshift into animal forms, using mostly the form of animal such as hyena in here.
It is all I know regarding the myth known as ghouls at least.
As we've seen so far, this series has been shown to be "scientific" (I use that word lightly). So I don't think the Arabian myth concerning ghouls really pertains here. To be honest here, I don't know what you're asking; how to become a ghoul or just the origin of the species as a whole? So I'll try to answer both questions.
So we all know that you can be born a ghoul or you can have a kakuhou inserted into you and become one. I'll just guess that one needs an abnormally high amount of RC cells and then boom! you're a ghoul. Or ya got RC cancer. Don't think I need to go too in depth.
As for the origin of the species itself...shit, I don't really know. We don't even know the wide-spreadness (not a word) of ghouls in the world; whether they're just in the East, or all over the world. So I'll just take a guess. So, basically, ghouls are said to be a "disgrace" from 100 years ago (it says that somewhere I think). I think that this means that the ghouls are a victim of some sort of disease/genetic mutation that was supposed to be quarantined, and that was obviously a failure. Of course, there seems to be quite a bit of ghouls, so it'd be a pretty big group of people that was quarantined.
Anyways, just a thought I had to answer this question; feel free to pick it apart!

In Tokyo Ghoul, the race known as ghouls just is. It's as if you'd ask "how do you become a human". They are just born from other ghouls. No magic, no virus, no experiment. The only way for a human to become a ghoul is to undergo a torturous transplant of ghoul organs into a human body, which was, until the beginning of the manga, considered an impossibility.
So in short, unless Kanou gets your hands on you or you are part of the CCG, you do not become a ghoul, period.

What I was trying to say was that I don't think that the Arab myth concerning ghouls has much to do with the incarnation of the species; after all, it's just a myth. But when the ghouls appeared, I think that they were named after the myth because that's what they most resembled.

Unlike Arabian legend of them which is original one,in where you get born as ghoul European version has twisted that part.According to Western take on this myth,ghoul is but a servant of vampire that gets created(like Igor from Frankenstein type of servant lmao).So according to West you become a ghoul when vampire drinks from you and almost drains you to death but doesn't kill you.Upon this you become "half undead" and ghoul as such that is "Igor" for vampire who turned him into one.

There are similarities, but Ishida's Tokyo Ghoul Ghouls are a completely seperate case. He might've gotten his basic idea from myths, but developed something that is unique on it's own, with big differences to the way myths describe ghoul. The only real similarity is how they need human flesh to stay somewhat sane.
original ghouls were shapeshifters that was their ability in here to transform either into an animal form or steal identity of an another person
now many think Uta is shapeshifter there was even one shot story about Hysoka from HunterXHunter that was done by master Ishida I won't give any spoilers I will just say that people think that certain character in it is like some sort of foreshadow to Uta's rumored abilities
these are theories and I hate theories so I will keep long story short: if Uta is shapeshifter and only big if then in that case he would be closest thing to actual ghoul from myth

people think ghouls are like the ones in Tokyo Ghoul.. but that's not the case.. I've done my studying and research and found 4 different types of ghouls. they do not have their "Kagunes" but they are just like us but at more fond of eating us humans..it's really hard to explain but they exist.

Didn't know they existed, but as far as I know the most common appearance when you say 'ghoul' is a creature that belongs to the realm of the dead, just like skeletons, zombies or mummies, you also have the ghouls. Zombielike scavengers of human meat. I think their stories are originated from Egyptian/Arabic mythology and was expanded on through the years.
To exactly trace such stories back to their origin is no easy task.
Well how do ghouls become a ghoul? Well if we look in the anime tokyo ghoul we look that kaneki ken starts as a human but then know rize and she trys to kill him but luckily an accident saves him and he was going to die but then the doctor says that the only way he could survive with a organ transplant from rizes to a ghoul and the 2 twins that where in the ccg academy but then they turned into a ghoul by an experiment of a ghoul but i believe that how regular ghoul not 1 eyed ghoul are formed is that a match of 1 eyed ghouls both mate and have have 1 human kid and the other a regular ghoul then match with another 1 and then pow and how they got to tokyo i've got no idea
Becoming a ghoul really wouldn't be so bad, the best way around it would be to eat humans that do wrong. Eating real criminals might not taste great (I'm sure it would taste the same as any other human) but at least it's one way of eliminating the things that are wrong in the world while curing hunger pains. I really wouldn't mind it, even if I was hated for it. I wouldn't be sure of what type of kagune I'll have as a part of me, I'm sure it woud be one that suits me best. Is it so bad to be something other than your own true self? I'd like to think I would be happier perhaps or at least useful to people if I were to reveal myself as a ghoul. I wouldn't know unless I were to become one. You never know, one day.
